Living La Vida Vegas (Is that the correct translation?) does indeed have it’s perks! 24/7 entertainment. Elvis on every corner. The ever present dream of hittin’ it big at the slot machine. And… food! Grandma LOVES to eat! No, for real. I.Love.To.Eat.

I think growing up in the ‘burbs of Chicago just spoiled me. I am picky about three specific foods. Hot dogs, pizza and burgers. Ya just don’t find that stuff anywhere but back home. Sure places claim to say they have ‘Chicago Style’ this or that. But, let’s face it. They lie. Or, they try. Semantics. Home Sweet Home Chicago… Nothing like it.

In my ever present quest for some decent eats, I did happen upon a little hole in the wall joint here in Vegas not to long ago. Burgers almost as good as Portillio’s. Just click the link, I have no words that can accurately describe their juicy goodness. And you know I jumped all over the guy behind the grill to tell me how he does it. Share the love that is  what I now fondly refer to as:

Grandma Juice Vegas Inspired Burgers – Grilling Like A Boss!

**Warning – Not Vegan friendly, full of fat, carbs and cholesterol**

Grandma Juice Vegas Inspired Burger

Ingredients:
1 1/2 LBS Ground Sirloin
1/2 TSP Salt (we use kosher and grind it)
1/4 TSP Peppercorns (again, grind it!)
8 Slices Of Thick Cheddar Cheese
1 Red Medium Sized Onion (peeled, cut into 1/2-inch-thick slices)
4 Kaiser Rolls Split
1 1/2 Cups Shredded Iceburg Lettuce
1 Large Ripe Tomato (cored, sliced thin)
Guacamole (optional, but why wouldn’t you??)
Sweet-N-Spicy Sauce

3/4 Cup Ketchup
1/2 Cup Orange Juice
1/4 Cup Worcestershire Sauce
2 TBSP Garlic (fresh, minced is best)
1/2 TSP Cayenne Pepper
(dump it in a mixing bowl, mix!)

Directions:
Wash your hands! We’re getting all gunked up for this one.
In a bowl mix ground beef, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Divide meat mix into eight equal portions. Shape each into a nice round burger looking patty. (pat, pat, tap, tap, pat, tap and pat once more for good luck)
Take four of your burger patties and top with 2 slices of cheese. Place another patty on top and press edges together to seal. (it’s going to ooze out some and this make it so awesome, but we don’t want all the cheese to ooze out, so seal well)
Fire up the grill baby! High heat for gas or nice burning embers for charcoal. (if you can hold your hand over the grill for more than 2 seconds, it’s not hot enough)
Brush grill will a slight coat of oil to prevent sticking (we use Extra Virgin Olive oil)
Lay burgers on grill. Lay onion slices on grill.
Grill baby grill! Turning burgers only once until brown and cooked thoroughly. (about 10 minutes total for medium, you can poke a small hole to peek inside to check color of meat)
Cook onions to liking, turning only once
Remove burgers and onions from grill
Place buns (cut side down) on grill. Cook until lightly toasted (about 30 seconds ish)
Spread Sweet-N-Spicy Sauce on bun bottoms. Add lettuce, tomato, burger, onion, and Guacamole. Place bun tops in place.
Grab lots of napkins, you’re going to need then!
Serve
