Grilled Salmon Recipe With Pinot Noir Reduction
& Truffle Garlic Spinach With Sun Dried Tomatoes
To answer the first question you all are just dying to ask I’m sure… YES!!! We finally landed at our sweet resort on our trip to San Diego! After that disastrous breakdown in the filthy bathroom from hell, we landed in the lap of relaxation and oceanfront beauty at Sheraton San Diego Hotel & Marina! I’ve got several posts planned for the coming weeks about the sweet deals and adventures awaiting traveling families you can find here. But first, I really had to sneak this absolutely *to die for* anniversary dinner I had the other night. It was made at the Harbor’s Edge Dining Room here. It’s a delicious grilled salmon recipe with an OMGLeeee side of mashed potatoes and truffle & garlic spinach with sun dried tomatoes!
Since all the seafood here is so fresh, I really wanted to jump into a sushi place. But, Ethan wanted absolutely no part of that. I tried begging and bribing but, no such luck. Since the lux Harbor’s Edge Dining Room offers so many different choices that you can’t go wrong no matter what you actually order, we compromised. He got his old stand-by favorite, a cheeseburger. Naturally. And Grandpa, he had the most tender roasted pork tenderloin with apricot walnut chutney we’ve ever had! (I just posted that recipe for ya! Go on, check it out! You do NOT want to miss it!) My new BFF Mark over here at The Sheraton has really been so kind and has treated us so well, I think I might just give him his own “Blog Post of Awesomeness“…. But, we’re going on a Pirate excursion in a bit so, for now, I’ll leave you with this fab grilled salmon recipe. And for real, you have to make it with the truffle garlic spinach. Just trust me on this one!
Grilled Salmon Recipe
Ingredients:
1 Cup Pinot Noir Wine (wine!!)
1 1/2 TBSP Balsamic Vinegar
1/2 Shallot (minced)
1/2 Cup Chicken Stock
1 1/2 TBSP Butter (cut into 1/2-inch slices)
1/4 lb Salmon Fillets (cut into 2 portions)
1/2 TBSP Olive Oil
Kosher Salt (to taste)
Fresh Ground Pepper (to taste)
Directions:
Combine the wine, (did someone say wine, again??) vinegar, shallot and garlic in a medium saucepan. Allow to boil over medium-high heat. Lower temp to medium. Let this to cook until it’s reduced by half (about 20 minutes) Next, add chicken stock and again, bring to a boil. Cook until this is now reduced by half (about 10 minutes) Remove from heat and whisk in butter. Brush salmon with a light coat of oil and sprinkle with salt and pepper (to taste) Grill salmon for about 2 minutes on each side. Transfer to a pre-heated large (nonstick) skillet and finish cooking over medium heat until browned on both sides (about 4 minutes per side)
Truffle Garlic Spinach With Sun Dried Tomatoes Recipe
Ingredients:
2 (9) Ounce Bags Fresh Spinach
2 TSP Truffle Oil
A Handful of Sun Dried Tomatoes (use this recipe where I show you how to make the from scratch!)
1 Minced Garlic Clove (or not, to taste)
Kosher Salt (to taste)
Fresh Ground Pepper (to taste)
(also, adding crimini mushrooms would be super!)
Directions:
Drizzle truffle oil into saute pan and allow to heat. Add garlic & sun dried tomatoes and saute just until it tarts to brown (very slightly and aroma is released) Add spinach (1/2 at a time) and toss over medium-high heat. Allow each batch to wilt slightly before adding the next (about 2 minutes each) Saute just long enough until all spinach is wilted and heated. Stir in 1 teaspoon truffle oil. Mix thoroughly. Season with salt, pepper to taste. (if making with mushrooms, these should be sauteed prior to spinach)
Now comes the super, delicious part. Plate up that grilled salmon recipe along with the oh so yummy spinach. Maybe add a nice whipped side of mashed potatoes and dig right in! Of course, with a dish this elegant, you shouldn’t ‘dig’… you should eat properly as if Grandma was at the table with you. Manners, people. Remember your table manners!
