It’s no secret around these parts that I’m a reality TV junkie. Anything that starts “The Real Housewives Of…” I’ll watch on repeat. In Vietnamese if I need to. Shit like that just makes my crazy family seem… normal better. It’s also no secret that Gordon Ramsay drives me insane. Like, in a ‘whew it’s hot up in this kitchen and I kinda like the tingly feel’ kinda insane. I’d do him. On the stainless steele prep line. With dirty pots and pans flying all over that Hell’s Kitchen set. Wait, this has nothing to do with mushroom risotto does it?
I was feeling poopy still about having to put my beautiful Jaden down and quite giddy at the same time about my crazy family finally leaving after their visit. I needed to do something to take my mind out of both. So, what better than to make a huge ass mess out of the kitchen, right? I’ve seen old Gordon up there ripping those hopefuls new assholes every time they shoot for the golden mushroom risotto dish. So, I decided to give it a go. And ya know what? It wasn’t half bad!! Kinda surprised myself! I’m thinking it’s because it has wine in it and Grandma Juice loves some wine. Or, it could be a fluke and never turn out right again. We’ll see…
And ya know what just occurred to me??!! I have no clue if this is even how Gordon Ramsay makes mushroom risotto!! I found this recipe on an old can of expired chicken broth. (no, I didn’t use it to make this, they were on sale and I had coupons so I bought some new stuff) Remind me to Google that later, K?
Here’s MY mushroom risotto recipe…. try it.
Not Gordon Ramsay’s Mushroom Risotto
Recipe:
- 2 Cups of Rice
- 2 Shallots
- 2/3 Cup Dry White Wine (or more!?)
- 1lb Mushrooms (chopped)
- 8 Cups of Chicken Broth (not expired)
- 1/4 Cup of Olive Oil
- Salt & Pepper (pinch, dash, shake, you decide)
- 1/4 Cup Parmesan Cheese (or more?)
- 1/3 Cup Butter (margarine is OK, but butter is better)
- In large sauce pan, start letting the not expired chicken broth to warm on low
- In small frying pan, heat 2 tblsp. of the olive oil and add in mushrooms. Cook for maybe 3 minutes(ish) Remove from heat and set it aside
- In another larger frying pan, heat 1 tblsp of olive oil and add shallots. Cook for 2 about minutes
- Add in rice and cook together for about another 2 minutes (rice should be coated with oil and start to brown, slightly)
- Now we get to the good stuff! Pour in your wine! Let the rice absorb wine. (it’s totally cool to finish off the bottle now)
- Here’s the tough part, add 1/2 cup of not expired chicken broth at a time, stirring constantly! Don’t let the rice burn and/or stick to bottom of pan! (or Gordon Ramsay will suddenly appear and call you all kinds of bad, bad names)
- Continue adding until all of the broth is in and rice is fully cooked (about 15-20 minutes)
- Grab the set aside mushrooms and stir in (if you’re really wanting to go all out, try adding some spinach or peas even!)
- Serve hot and top with a plop (just made that word up) of butter and sprinkle on some fresh grated Parmesan

Your opening paragraph cracks me up! I hate mushrooms, absolutely abhore them but if I was starving to death I’d think your recipe would sounds good. 🙂

I think if you can get him to your door in any way, you’re doing well. That looks fantastic. I’ve only tried risotto once at my sister’s and I thought it was excellent. Really need to add that recipe to my repertoire. Thanks!

Really, Gordon doesn’t do it for me…. but I would love to try a dish of his. In a totally non dirty type of way. 🙂 I do NOT like mushrooms but this does look so good I would consider it!

I think you are way cooler than Gordon Ramsey, so you could take him on any day! Funny story (or one to illustrate my lack of culinary knowledge), for some reason, I always thought risotto was rabbit, and didn’t understand why so many people ate bunnies. I’ve since learned that’s not the case, but it makes me wonder what other foods I get wrong!

I’ve been “planning” on making risotto for the longest time. Have the rice and most ingredients, but have always been a bit intimidated. Probably because of watching things like Hell’s Kitchen.
