Triple Layer Mud Pie Recipe Homemade Chocolate Nut Pie

I had our now famous Wake Me Up Party last Sunday and really wanted a nice tasty dessert to go along with our breakfast and coffee. Can I just say I’m am quite pleased at what Grandpa created up in here!! Not only was this Mud Pie Recipe super easy, but we got to use the International Delight Iced Coffee we bought in a way I really never thought of using it! Holy cow, you  guys!! It’s not just for drinking! For real! We made a Mud Pie Recipe!

It turned out to be an ooey, gooey, chocolaty, nut pie full of goodness that made our taste buds sing, dance and do cartwheels!! Ok, that may be a little dramatic. Mine only sang. But I’m positive someone’s were doing cartwheels! The best part is that you can add, subtract and switch around the ingredients in a ton of different ways. I’m thinking… (yeah, my brain still hurts when I think) the next time we make this mud pie recipe I’m going to use some left-over Halloween candy. How does crushed up Reese’s and / or Snicker bars sound to you? I know!! Me too!!

Ok, I’ll quit yammering and just get to the mud pie recipe giving. Ready?

Mud Pie Recipe Ingredients:

3 (1-ounce) Squares Baker’s Semi-Sweet Baking Chocolate (melted)
1/4 Cup Sweetened Condensed Milk
1 (6 ounce) Oreo Pie Crust (we used pre-made)
1/2 Cup Pecans (chopped)
2 Cups International Delight Iced Coffee (we used Mocha flavored) Can use milk!
2 Packages (4 serving size) Jell-O Chocolate Flavor Instant Pudding
1 (8 ounce) Tub Cool Whip (thawed & divided)

Mud Pie Recipe Directions:

Mix melted baker’s chocolate and condensed milk until well blended. Pour into pie crust and sprinkle a layer of pecans on top. In mixing bowl, beat iced coffee (or milk) and dry pudding mixes with wire whisk 2 min. or until well blended. (Mixture will be thick) Spoon 1-1/2 cups of the pudding over pecans to form another layer. Add half of the whipped topping to remaining pudding and stir until well blended. Now spread that over the pudding layer. Top with remaining whipped topping.  We had a few chocolate chips left over from some cookie baking and dotted the top with those. Refrigerate for 3 hours prior to serving.

And there you go! Easy, yummy and very kid friendly for little hands who like to help! Don’t forget to lick all spoons and mixing utensils prior to washing. It’s always such a shame to let that go to waste!

Try it! Let me know what you think! What would you add or change? Anything?
