The Best Homemade Meatloaf Recipe Comfort Food at It’s Finest

Finally work you way through all that left-over turkey? We actually froze some to make a Tetrazzini  this weekend, but man. I am turkey’d out! While they were busy charging $1.00 lb for those birds, we stocked up on some ground beef!

We pulled out an old favorite homemade meatloaf recipe to whip up a great, easy dinner that had zero to do with turkey. Ethan loves this meatloaf recipe because it uses Goldfish crackers! Yep! Those little orange guys just add something different. (and a slightly more orange-ish color too!)We call it “Ethan’s Special Homemade Meatloaf Recipe” I say, give it a try, let the kids help make it (and, pop a few in their mouths!!) It’s really super easy and one of the best homemade meatloaf recipes we’ve got floating around. Add this, take out that… change it up! But tell me what you do to make yours. I’d love to know!

Ethan’s Special Homemade Meatloaf Recipe:

INGREDIENTS:

  • 2 lbs *Lean Ground Beef (we use 95/5)
  • 1/4 Chopped Onion
  • 1/2 Cup Goldfish Crackers (crushed… with Ethan’s help, of course)
  • 2 Eggs (beaten)
  • 3/4 Cup of BBQ Sauce (we always use Country Bob’s All Purpose Sauce)
  • Salt/Pepper (to taste)

DIRECTIONS:

First, place Goldfish crackers in a zip-loc bag and crush. Or, let the kiddos have at it. Just make sure it’s sealed. Combine the rest of the ingredients in a mixing bowl make sure it’s mixed really, really well! We get in there and ‘gush’ it around with out hands. How do you mix up ground beef? Place that whole mixture in sprayed loaf pans. Nothing worse than a great meatloaf recipe ruined because it sticks coming out! Bake at 350* for about 1 hour (meat must be thoroughly cooked) Remove from oven and spread desired amount of Country Bob’s Sauce on top. Place back in oven for approx. 15 minutes or until sauce on top starts to get ‘bubbly’ (that’s my very unofficial timer) Serve hot with some mashed potatoes and a healthy veggie and eat!

Also, another great meatloaf recipe we have calls for powdered Ranch Dressing Mix along with all the above ingredients. Now that’s full of awesome sauce as well!

    OK so we don’t eat grains around here (THREE of us have gluten allergy) but when I decide to have an indulgent meal, I’m going to come back here for this recipe. GOLDFISH IN MEATLOAF???? Ingenious. And no kidding, the first picture made me drool like crazy. We LOVE meatloaf here.

  26. ooo wouldn’t have ever thought to use goldfish crackers, usually just use regular crackers. I like that you use bbq sauce instead of ketchup…May try this next time i have some goldfish on hand 🙂 thanks!

  27. Do you mix the BBQ sauce into the meat mixture, or just spread on top?

      We d both!!! Put about 1/4 cup IN the meat when you are mixing it all up before cooking. Then place a nice layer on top for the last 10-15 minutes of cooking time! DELISH!!!
      Oh!! And don’t forget those Gold Fish crackers 🙂
