Sausage Stuffed Squash Recipe Good Fall & Holiday Eating
What do ya do with all that beautiful winter squash? Ya, I really didn’t know either. I stumbled into a sausage stuffed squash recipe and thought “Holy Cow Ronni, that’s way better than the typical butter and brown sugar get up”… (Yeah, I thought exactly that!)
Of course, me being me… I had to change it up just a bit. The original recipe called for pine nuts, which I left off because Ethan would whine. Total party pooper. Also, I switched out Parmesan cheese for some fresh grated Mozzarella. Waaaaay better in my opinion. But, then again, what do I know. Bupkis, that’s what. Feel free to switch back. Or, better yet, make it your own and mix it up even more!
Sausage Stuffed Squash Recipe
INGREDIENTS:
2 Spaghetti Squash (halved & seeded) {also, great with acorn squash!)
1 TBSP Butter (melted)
1/4 TSP Garlic Salt
1/4 TSP Ground Sage
1 LB Ground Pork Sausage (regular seasoning)
1/2 Cup Onion (finely chopped)
1 Celery Rib (finely chopped)
4 OZ Mushrooms (chopped)
1 LRG Granny Smith Apple (cored and chopped)
1 Cup Fine Breadcrumbs (we bought them, but left-over bread from Thanksgiving would be perfect!)
1/2 TSP Fresh Sage
Salt & Pepper (to taste)
1 Egg (beaten)
2 TBSP Fresh Parsley (chopped)
1/2 Cup Fresh Shredded Mozzarella Cheese
DIRECTIONS:
In small mixing bowl, combine the melted butter, garlic salt and 1/4 teaspoon sage. Brush over cut sides and cavity of squash. Salt and pepper to taste.
Place squash on large cookie sheet or baking dish. Bake cut side up, at 400* for 1 hour. Squash should be tender, yet still holds its shape.
Meanwhile while squash is cooking, let’s make some sausage and apple for stuffing! Fry pork sausage until light brown. Remove pork to a colander to drain. Drain all but 2 tablespoons of the drippings from fry pan. Add onion, celery and mushroom; saute 4 minutes. Stir in apple and saute 2 more minutes. Smells good, huh?
Combine the pork, vegetables, and breadcrumbs in a large bowl.
Taste test time! Need anything extra? Season with sage, salt or pepper if needed.
Stir in the egg and add parsley.
Fill the squash halves with sausage stuffing. Fill until they are slightly mounded.
Cover with foil and return to oven and bake for 20 more minutes. Uncover, add shredded cheese and pop back in over just until cheese is melted.
Garnish as desired with parsley and a bit more shredded mozzarella. Cut in 1/2 again and serve!
Now isn’t this sausage stuffed squash recipe better than brown sugar and buttered squash?? Oh yeah, it totally is!

I love Squash but my husband doesn’t. He doesn’t like ANY type of squash either – I have tried it all. He suffers through it for the children, but prefers that I not go crazy with it often 🙂

This sounds so delicious. We eat squash but I usually make like a lasagna and layer everything meat and all. i especially like that apple was added too. Apples always go good with sausage I think. This would make a nice meal for in the fall when all the leaves are falling.
