Chicken Marsala Recipe – Easy, Elegant & Extremely Yummy!
Oh! Lookie there. I’m going to consume more wine! Go figure! (what??) Typically, white wine is my favorite. Red’s tend to be a bit too dry for my drinking style so I cook with them. Last week, we popped open a really nice bottle of Daniel Gehrs Chenin Blanc. It was a bronze medal winning wine, so I really had high hopes for it. It was… OK. Not bad by any means but a bit on the dry side for me. So, naturally I’m not going to toss it (waste wine = a crime) But, what to make… We had a Chicken Marsala Recipe stashed in the box and thought, why not. Obviously.
If I Don’t Use Marsala Wine Am I Still Allowed To Call This a Chicken Marsala Recipe?
Hell yes! My kitchen, my rules. Your kitchen your rules! And… WINE!!! Really, it’s the chicken, mushroom, wine combo that makes this a Chicken Marsala Recipe, right? Or is that just me?? OK wait, there’s 1 exception to this rule. Never, ever, ever, NEVER use cooking wine! Blech! You can even pop into Trader Joe’s and spend $3.99 on a decent white wine and use that. Anything but cooking wine is A OK. (and don’t let anyone convince you different!) Enough chatter, on with the show.
Chicken Marsala Recipe
INGREDIENTS:
1/2 Cup Flour
2 1/2 TBS Paprika
2 TBS Salt
1 TBS Garlic Powder
1 TBS Pepper
1 TBS Oregano
2 (6 ounces) Boneless, Skinless Chicken Breast (cut in halves & pounded)
1 TBS Olive Oil
4 TBS Butter (real butter, not margarine)
3 cups Mushrooms (sliced)
1 Cup White Wine (Marsala, or… whatever. NOT cooking wine! Blech!)
1 Cup Chicken Stock
Fresh Chopped Chives (garnish)
DIRECTIONS:
In a shallow bowl (I use a pie plate, it’s perfect!) combine the flour with all the seasonings. Use a fork to toss it around a bit and combine thoroughly. Dredge the chicken breast in the seasoned flour mixture. Give it a little ‘shake’ to remove any clumps of flour. In a large skillet heat olive oil (medium-high heat) until hot (not smoking) Add 1 TBS of butter and cook the chicken breasts until they are a nice golden brown on both sides. Remove from pan, place on a plate and set aside. Add 1 TBS of remaining butter to the same pan.
Drop in the mushrooms. Cook, stirring frequently. (approx. 1-2 minutes) Add your WINE!!! of choice and bring to a boil. When the wine is reduced by half, add chicken stock. Cook until sauce has become slightly thick. Lower your heat to medium, return the chicken to the pan. Cook thoroughly(no pink!! no runny juice!!) The sauce will thickened even more. Add remaining 2 TBS of butter. Salt & pepper, to taste. Garnish with your chopped chives and serve!
Yes, there’s quite a few steps in this process, but they are really simple ones. Don’t be all intimidated by the fancy name… Marsala. This Chicken Marsala Recipe is really easy! It sounds very elegant and it is extremely yummy!! Even the kids can help!

“Honey, I made a fancy, Italian Chicken Marsala Recipe for dinner tonight. I slaved all day over the hot stove (30 minutes, maybe) and now. I’m going to rest (watch TV, read, take a bubble bath, drink more WINE!!) and you shall wash the dishes, bathe the kids and then mop the floor. You’re welcome.

I said I used an awesome bottle! It won fancy awards and stuff… Just a wee bit too dry(ish) but still smooth. Since I have back up bottles, I figured some cooking would be super for it. I would have absolutely drank, drank, drunk it if I couldn’t have found a ‘fancy, elegant’ recipe befitting such a super bottle! 🙂

I make veal Marsala all the time since my hubby is Italian. Chicken Marsala is much the same recipe. Looks good and love how your lil guy is helping.

Switch regular flour to gluten free flour and this looks really good. A lot more work than I tend to put into my meals on a daily basis, but perfect for a special night.

hehe, you crack me up talking about what wine to use. Cooking wine is so worthless in this day and age. You can totally get good wine for what that stuff costs. This sounds yummy… might sub it in for the chicken parm I was planning for this week.

This sounds not too difficult. That means I might be able to accomplish this. Might. We’ll see. I don’t think I’ll use the Gehrs, though. That’s a TAD high-priced for this recipe. Where’s that cooking wine? Hmmm….
