Ultimate Coffee and Chocolate Cupcakes Recipe Baileys Drunk Cupcakes

Coffee and chocolate? And cupcakes? And!! Alcohol? Yes!! All that deliciousness happened. And it happened in my very own kitchen. Because, why not? I got my head stuck in the awesomesauce recipes that popped up everywhere for ‘Drunken This’… ‘Alcohol That’ when the St. Patrick’s Day recipes started rolling out. And so, I jumped on the bandwagon, naturally. I Googled my little fingers off trying to find the bestest coffee and chocolate cupcake that I could throw some alcohol into and I found Tidymom.net made a damn near perfect recipe already! Her Bailey’s Chocolate and Caramel cupcakes were a bit more work and not enough booze for me though. Let’s face it. Less work, more booze = A Good Thing. They don’t call me Grandma Juice for nothing, right?

Ultimate Coffee and Chocolate Cupcakes Plus Booze!

So, what did I change? I added booze to the frosting too! Oh Yeah! Pinacle Whipped Cream flavored Vodka! Saaaaweeet! So, what do we have now you guys? We have coffee and chocolate. Since I was up for the American Chocolate week challenge, I already made chocolate dipped espresso beans. Now, we also have cupcakes, Bailey’s and more booze with the flavored vodka frosting! I’m thinking of making a new theme over here… Grandma Juice Makes Drunken XXX (fill in any recipe) Yes? Want to bake coffee and chocolate drunken cupcakes with me? Let’s go get our drink… uumm… cupcake on!

Ingredients:

For Cupcakes

  • 1 Box Duncan Hines Dark Chocolate Fudge Cake Mix (well, that’s easy!)
  • 3 Large Eggs
  • 1/2 cup Butter (melted, not margarine)
  • 1/2 Cup Milk
  • 1/2 Cup Bailey’s Irish Cream

For Vodka Whipped Cream Flavored Frosting

  • 3 TBSP Butter (softened, not margarine)
  • 1/4 Cup Heavy Whipping Cream
  • 1 TSP Vanilla Extract
  • 4 Cups Powdered Sugar
  • 6 TBSP Whipped Cream Flavored Vodka (we used Pinacle, pick your poison)

Coffee and Chocolate Cupcakes Drunken Cupcakes

Directions: 

Let me say, before I get hate mail… Ethan got his own non-alcohol batch and decorated them himself. Messy? Oh yeah for sure. But since I’ve never made drunken coffee and chocolate cupcakes before, I wasn’t entirely sure all the alcohol baked out. Like it does in my Chicken Marsala recipe for example. So, rest assured, no drunky small fry’s over here. Now, preheat your oven to 350*. In a large mixing bowl, add cake mix, eggs, butter, milk and the yummy Bailey’s. On low speed, mix until completely combined. Line your cupcake pans and fill ‘er up with batter. Bake for about 20 minutes or until toothpick pulls out clean (oven’s vary ya’ll) While cupcakes are cooling, let’s whip up that boozey frosting! In large mixing bowl, add butter, cream, vanilla, and powdered sugar and mix on low for 3-5 minutes until smooth and no lumps (lumps are yucky!)  Add vodka and mix that in well. Add powdered sugar or more vodka a teaspoon at a time to adjust to desired consistency. Do not be tempted to pour vodka directly from bottle into mix. Just trust me. It will get soupy. Feel free to swig all you want from the bottle however! Now have fun decorating! Add your chocolate dipped espresso beans (or, my bark recipe) and you have the ULTIMATE COFFEE AND CHOCOLATE DRUNKEN CUPCAKES!!

**side note**
Nope, we did not get all liqured up after eating these, so in my official and now tested, professional opinion, at least most of the alcohol does indeed bake off! Damn it.
