Loaded Sausage & Bacon Breakfast Casserole Recipe Easy Morning Meals
When Ethan went back to school last month, I imagined all kinds of free time. Lounging in my jammies on the couch all day. Maury telling me who the baby daddy is. Taking some serious power naps. Course, I’d work in some time to throw laundry in to wash. And, I’d for sure be #BloggingLikeABoss, cranking out the funny and my amazeball recipes. 2 blogs and my social media clients keep me hopping. Jokes on me my friends. Because now… I’m more busy! How does that happen? Waking up at Still Dark O’Clock, *coffee* packing lunches, grabbing school uniforms, *coffee*, shoving homework in backpacks, *coffee* and then making breakfast. I won’t even bore ya with what goes on in the mad (genius) house after we do the ‘hurry up so we don’t miss the bus’ trot. The longer we play this morning dance, the more I learn to plan ahead. Took me awhile but I’ve got it down! 2 mornings a week, I make a different version of my Ultimate Loaded Sausage & Bacon Breakfast Casserole! Yep, that’s officially what it’s called. When you make it, feel free to use that. Totally elevates you to Rock Star mom status. I make this at night while I’m enjoying Wine Time, cook it until it’s just baked, then pop it in the oven for 10 minutes and Breakfast Is Served! Here’s how it works…
Loaded Sausage & Bacon Breakfast Casserole
Ingredients:
- 12 OZ Bacon (cooked, drained, chopped)
- 16 OZ Sausage (you choose flavor, cook, drain, crumble)
- 8 Eggs
- 1/4 Cup Country Crock
- 1/2 Cup Sour Cream
- 1 Onion
- 1 Green Pepper
- 12 OZ Button Mushrooms
- 1 1/2 Cups Grated Cheese
- Salt & Pepper (to taste)
Directions:
Start by preheating your oven to *350. Cook up your Bacon and Sausage. Drain. Chop bacon into small bits, set both aside. Grab a LARGE pan. After chopping up all your veggies, cook those in Country Crock just until they are tender. They will cook more once in the oven with your yummy breakfast casserole! Yep! There’s a lot of veggies! Awesome, right? Kids need those veggies! Plus, that’s why I call it the Ultimate Loaded Breakfast Casserole, silly! It’s fully loaded! While those are cooking, mix eggs, sour cream and 1 cup of your cheese. Mix well!
Toss in your cooked and drained bacon and sausage and mix that all up good too! Grab an oven safe casserole dish (or even a 9X13 greased pan) Pour in your egg mixture! Now, pour in your cooked veggies. If you’re making the Ultimate Loaded Breakfast casserole the night before, cook for 30 minutes. Remove from oven, cover and place in ‘fridge. Pop it in for 15 more minutes in the morning, sprinkle with remaining cheese and fill those kiddies up good! If you’re making and serving immediately, cook for 45 minutes. Remove from oven, sprinkle with remaining cheese and fill ’em up!
I know, right!!! I told you, it really is THE Ultimate Loaded Breakfast Casserole! It’s a super healthy way for the small fry’s to start their day! All those veggies, tons of protein, and Country Crock has 0 Trans Fat and 30% less fat than butter And!! Super easy for you when it’s ‘back to school busy’! It’s Fall, and this is the time for comfort food. If this doesn’t qualify, I don’t know what does!

Nom Nom Nom….it’s that time of year for me, when my family finds any and every reason to come together and food is always involved. I’m always looking for casseroles, especially breakfast, that will satisfy a lot of the group. This sounds like a winner. I’m definitely going to give it a go! You had me at button mushrooms.
